The Details
Sauvignon Blanc, Pinot Noir and Gewürztraminer from Mangatahi in Hawke’s Bay. Grapes were hand-harvested and fermented separately using wild yeasts. Both the Sauvignon Blanc and Gewürztraminer are fermented on the skins and stems with the occasional gentle hand plunge. After pressing and blending, the wine is also blended with a bit of Pinot Noir rosé, followed by aging on the lees for 6 months. Unfined, unfiltered, no SO2.
