The Details

A blend of Procanico (Trebbiano Toscano), Rossetto (Trebbiano Giallo), and Malvasia Bianca Lunga from vines planted in sandy, volcanic soils on Lake Bolsena. After crushing and destemming, the grapes are fermented in cement vats with native yeasts and on the skins for 4 days. The wine rests in cement and steel vats for 6 months. Bottled unfined, unfiltered with a small amount of SO2.
