From the southern reaches of the volcanic Lake Bolsena in Northern Lazio, this is 100% Canaiolo Nero that sees 1 night on the skins in cement tank prior to pressing. Spontaneous fermentation is followed by 6-month maturation in steel. Bottled unfined, unfiltered, no additional SO2. 12%ABV
