The Details

From biodynamically cultivated vines in Puy de Notre Dame of the middle Loire, this is 70% Cabernet Franc on tuffeau (~28 year-old vines) and 30% Pineau d'Aunis also on tuffeau (~17 year-old vines). Grapes are hand-harvested and spontaneously co-ferment/macerate for 9 days in a combination of fiberglass and stainless steel before racking to neutral barrel for 7 month élevage and bottling thereafter unfined, unfiltered, no additional SO2.
