The Details
Lovely 0/0 Cab Franc. From ~28 year-old biodynamically cultivated vines in Puy de Notre Dame on clay/limestone soils (tuffeau). Grapes are hand-harvested and vinified in two lots: half are destemmed and macerate for 5 days, the other half semi-carbonically macerates whole-cluster in open-top fermenters before aging in neutral vessel for ~1 year. Bottled unfined, unfiltered, no additional SO2.
