The Details

From 24-44 year-old biodynamically cultivated vines in Puy de Notre Dame in the middle Loire, this is Cabernets Franc & Sauvignon. Grapes are hand-harvested, destemmed and macerate / spontaneously ferment for 10 days in neutral barrel before 7 month élevage also in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
