The Details
From one of the leading lights of the Natural Wine Scene in the Languedoc, this is a saignée (bled) rosé of Grenache and Syrah from 15, 50, and 70 year-old dry farmed vines planted in basaltic clay soils outside Julien's hometown of Paulhan. The grapes were harvested by hand on the 10th, and 15th of August in 2022. The Grenache grapes macerate for 24 hours before being "bled" into the directly-pressed juice of the Syrah. The juice spontaneously ferments and the wine matures for about 6 months in stainless steel before being bottled unfined, unfiltered, no additional SO2. 11.3% ABV
