The Details
100% old-vine Syrah from the l'Herault courtesy of Julien Peyras! Grapes are hand-harvested from biodynamically cultivated vines in clay/limestone soils. Destemmed, the grapes macerate for 12 days with gentle remontage prior to pressing. Aging for 8 months in vat prior to bottling unfined, unfiltered, no additional SO2.
