The Details
From Swabia in Southern Germany, this is is composed of 60% Trollinger, 30% Pinot Noir, 10% Zweigelt. Grapes are hand-harvested. 60% of the grapes are destemmed. 40% Whole-cluster. Grapes then macerate for 5 days prior to pressing. Spontaneous fermentation and aging in stainless steel vat. Bottled unfined, unfiltered, minimal added SO2 (>10ppm). 11.5% ABV
