The Details
From Swabia in Southern Germany, this thirst-quencher is composed of a host of white grapes: 35% Johanniter, 20% Riesling, 10% Silvaner, 10% Kerner, 10% Müller-Thurgau, 10% Chardonnay, 5% Pinot Blanc all organically cultivated in a variety of soils (some with volcanic remnants). Grapes are hand-harvested - Johanniter and Riesling are directly pressed and spontaneously co-ferment in open vat. The other varieties are whole-bunch spontaneously fermented with the skins for one week prior to pressing. The wines are then blended in stainless steel tank where they age for 6 months prior to bottling. Unfined, unfiltered, minimal added SO2 (>10ppm). 12.5%ABV
