The Details

80% Grenache, and 20% a combination of Clairette/Carignan/Syrah/Cinsault from a very difficult 2021 vintage. Grapes are hand-harvested from organically cultivated vines in Sabran in the Gard (Rhône adjacent) and vinified separately before blending. Grenache gets 5 day whole-cluster spontaneous fermentation meanwhile the Clairette/Carignan/Syrah/Cinsault are all directly pressed and spontaneously co-ferment before blending with the Grenache. Aged in neutral vessel for 10 months before bottling unfined, unfiltered, minimal (>10ppm) added SO2.
