The Details
From the importer, Other Blues:
Malvasia Castellana, otherwise known as Doña Blanca (white lady) in Galicia. Calcareous gravel on clay bottom, different from the more sandy and pebbly soils (also with clay bottom) of most of their vineyards. Single vineyard planted in 1945, which Juanjo and Maribel took over in 2021. Grapes were destemmed and macerated for 6 days, and then bottled for ancestral when density was right. Disgorgement by hand, taking advantage of (and surely suffering a bit of frozen hands in ) the cold winter mornings.
