Working in his hometown of Saumur, Sylvain Dittière and his partner Pauline Foucault craft some of the most thrilling natural loire wines to enter the modern day fray -- wines which echo elements of their mentors (Gerard Gauby, Marc Tempé, Thierry Germain, & Antoine Foucault). This is their only cuvée of Chenin Blanc (declassified Anjou Blanc).
100% Chenin Blanc from old vines (60-90 years-old) that are grown on clayey/silty Turonian soils. Grapes are hand-harvested, directly pressed, spontaneously fermented in a combination of tank and barrel. The wine is then racked to neutral barrel for 24 months of élevage. Bottled unfined, unfiltered, minimal added SO2. 12%ABV
