About the wine

Working in his hometown of Saumur, Sylvain Dittière and his partner Pauline Foucault craft some of the most thrilling natural loire wines to enter the modern day fray -- wines which echo elements of their mentors (Gerard Gauby, Marc Tempé, Thierry Germain, & Antoine Foucault). This is their 100% Cabernet Franc from Saumur that has 60+ year-old vines grown in clayey/marly/alluvial soils. Grapes are hand-harvested and macerate for 6 weeks with 2/3 free-run juice and 1/3 pressed juice fed into neutral Bordeaux-type barrels where it then ages for 18-24 months prior to bottling unfined, unfiltered, minimal added SO2. 11.5%ABV
