The Details

100% Maresco biodynamically cultivated in Puglia's Valle d'Itria. Grapes are hand-harvested, destemmed, and soft-crushed. Spontaneously fermented over the course of 40 days. Aged also in stainless steel for 9 months prior to bottling unfined, unfiltered, with a touch of the wine's own unfermented must and minimal SO2 (<15ppm).
