The Details

100% biodynamically farmed Negroamaro from 20 year-old vines in Puglia. Destemmed and softly crushed, the juice spontaneously ferments/macerates with the skins for 20-30 dayrs. Pressed into stainless steel tank, the wine ages for 6 months prior to racking to large neutral barrel. Bottled unfined, unfiltered, minimal added SO2.
