The Details
100% Chardonnay from 65+ years-old vines on chalk in a single plot called 'Les Paluets.' Hand-harvested, destemmed and gently pressed. The wine undergoes full malolactic fermentation and is aged in barrel for 4 years prior to bottling. Disgorged á la volée (manually) after 2-3 yeras in bottle. Zero dosage. Unfined, unfiltered, no additional SO2. 12%ABV
