The Details
100% Roussanne from organically cultivated vines in sandy granite soils in the Roussillon. Grapes are hand-harvested, directly pressed in a pneumatic press. Spontaneous fermentation and aging in fiberglass vat and neutral barrel for up to 10 months before bottling unfined, unfiltered, no additional SO2.
Edouard Lafitte was one of the first of several influential winemakers to begin working in the remote area of la Tour de France in the mid90s. He perceived it to be "the end of the world," and after several years working in the cooperative cellar of Estézargues, he began his adventures in farming under that very name with seven and a half hectares of high-altitude vines on granite, schist, and gneiss. He creates elegant and possessing wines of both density and lift using low-temperature carbonic maceration. The juice is left virtually undisturbed before bottling without filtration and with almost no sulfur addition.
