The Details

From the Roussillon, this is Syrah/Carignan/Cinsault from organically farmed vines on Gneiss/Granite soils. Grapes are hand-harvested and spontaneously ferment/whole-cluster carbonically macerate for 15 days prior to pressing. Aged for 7 months in 228L neutral barrel. Bottled unfined, unfiltered, no additional SO2. 12.5% ABV
