The Details
This is a beautifully complex stony and pure expression of Chardonnay from Axel Prüfer of Le Temps des Cerises who tends ~8.5 hectares of vines in La Tour-sur-Orb in Southern France's Languedoc.
Vinification: 100% Chardonnay, hand-harvested from vines grown in decomposed limestone, quartz, and granite soils. Spontaneous fermentation (ambient yeasts; no temp. control) before a 6-month élevage. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV
