The Details

Undisgorged pét-nat (get it very cold prior to opening) of the same juice that finished as La Peur du Rouge. 100% Chardonnay from the limestone plateau in the Orb Valley that Axel Prüfer has called home for over 20 years. 4 passes in the vineyard in order to achieve a combination of ripeness, sugar, and acidity. Grapes are hand-harvested, directly pressed and spontaneously fermented prior to a short élevage. Bottled unfined, unfiltered, no additional SO2. Undisgorged12.5% ABV
