The Details
100% biodynamically cultivated Pinot Noir from the Les Bouttoniers parcel (gets a parcellaire blanc bottling) in Fontenay, a village neighboring their home village of Passenans. 3-week maceration and a shorter élevage in cuve than the whites. Reds have always been 0/0. This bottling is rustic and reductive at first and plays between this earthier kind of farmy aromatic profile and higher-toned tart red fruit on the palate. A truly country-feeling Pinot.
