100% Grechetto. Grapes hand-harvested and pressed in whole clusters in a vertical press. Another portions of grapes are picked later and are manually destemmed and left to steep for three or four days on the skins. Fermented in stainless steel with wild yeasts and aged lasts for 10 to 11 months with repeated bâtonnage. A touch of SO2 added at bottling.

The Producer: Mani di Luna

The Azienda, spanning 35 hectares, is situated in Torgiano, an area historically inhabited by the Etruscans. It is divided into two parts: one near the confluence of the Chiascio River and the Tiber, and the other in the hills at an elevation ranging from 200 to 400 meters above sea level. Originally owned by the Lungarotti Family, the lands were later inherited by Maria Lungarotti's son, Mario Cascianelli, a lawyer who had a deep passion for the countryside. Cascianelli recognized the significant potential of these lands for fruit cultivation, particularly vineyards, olive groves, and cherry orchards. In 2012, Fattoria Mani di Luna was established by three friends, Simone, Rocco, and Alessandro, who shared a common goal of revitalizing the Azienda using organic and biodynamic methods. The farm follows lunar cycles associated with the movement of constellations and employs manual and artisanal techniques to produce natural products with exceptional nutritional and energetic value, while also prioritizing the well-being of plants and the environment.
