The Details

85% Sangiovese / 15% Barbera from organically cultivated vines in Umbria. Grapes are hand-harvested, destemmed, and foot trodden. Juice macerates / spontaneously ferments for 2 weeks before pressing. Aging for 10-12 months in concrete before bottling unfined, unfiltered, minimal (20ppm) added SO2. 14% ABV
