This is a semi-sweet, fruity, no- (or joyously all?) nonsense Gamay-based sparkler from Marie and Vincent Tricot who tend 10.5 hectares of vines around the village of Orcet in the Auvergne.
Vinification: 100% Gamay hand-harvested from ~40 year-old vines grown in volcanic limestone soils. The grapes undergo whole-cluster spontaneous fermentation (ambient yeasts; no temp control) and are bottled under crown-cap before the first fermentation is complete, typical of the pétillant naturel method. Unfined, unfiltered, (disgorged), with no additional SO2. 11.5%ABV
