The Details
100% biodynamically cultivated old-vine Xarel.lo planted at 300m in limestone soils. Grapes come from 4 separate parcels (Quatre Xarel.lo in Catalan meaning 4 Xarel.los is from where the anagram of the cuvée's name comes). Grapes are hand-harvested and macerate for 12 hours prior to pressing. Spontaneous fermentation and élevage in a combination of amphorae and neutral barrels. Unfined, unfiltered, minimal added SO2.
