Grenaches Noir & Gris + Macabeu, from 55 year-old vines cultivated in a single vineyard (Coume de l'Olla). Grapes spontaneously co-ferment and macerate for 3 days prior to pressing to concrete for a short elevage. Bottled unfined, unfiltered, no additional SO2.
