This is a gorgeous rosado from northwest Spain that is complex and bright with a spritzy texture (though it is not sparkling) -- its aromatics are very complex, by turns chestnut & underripe salted strawberries. This would go perfectly with any late-summer barbecue or fresh shellfish. Vinification: 100% Tempranillo grapes hand-harvested from old vines grown in phyllite/loam soils. The grapes are destemmed and undergo spontaneous fermentation (ambient yeasts; no temp. control) with spent verdejo must in stainless steel. Once racked, the wine undergoes a short élevage before being bottled unfined, unfiltered, with no additional SO2. 12%ABV
