The Details
100% old-vine (80-100 years-old) Verdejo organically farmed in Segovia on (for the region, dominated by its famous sands) slate/loam soils at 900m elevation. Grapes are hand-harvested and whole-cluster directly pressed (slow press) to stainless steel tank for spontaneous fermentation and aging of 5 months prior to bottling unfined, unfiltered, no additional SO2. Might be a little spritz upon opening - he lets the natural CO2 stay in the wine to avoid spoilage without having to use sulfur.
