The Details

100% Chardonnay from 41 year-old vines planted in the Marnes du Lias soils of L'Etoile in the Jura. No-till farmning. The grapes are hand-harvested and directly pressed, the juice spontaneously ferments in neutral demi-muid prior to an élevage sur lie for 22 months. Bottled unfined, unfiltered, no additional SO2. 13.5%ABV
