The Details

100% Poulsard from the triassic marl Chazaux vineyard. 80% destemmed, 20% whole-cluster. Hand-harvested, the grapes macerate for 2 weeks prior to pressing. Spontaneous fermentation and élevage for 11 months thereafter in a combination of demi-muid and neutral Burgundy barrel. Bottled unfined, unfiltered, no additional SO2.
