The Details
MAGNUM. 60% Cabernet Franc, 40% Merlot from biodynamically cultivated in St. Émilion, Bordeaux. Grapes are hand-harvested, and manually destemmed.Spontaneous fermentation and maceration in neutral oak barrel prior to élevage in a combination of barrel and demijohn. Gravity bottled unfined, unfiltered, no additional SO2.
From the winemaker:
“For the first time, here is an Ormiale vintage produced in our new Saint Emilion estate,” says Fabrice, who notes that there were plenty of firsts that came along with this vintage — it’s the first time more Cabernet France was used than Merlot, and was also the first time he and his wife, Caroline, were joined by all three of their sons in the cellar. “I’ll let you imagine the emotion and the strong symbolic aspect of the whole situation: at work as a family in an old limestone quarry, right under the tower of Saint Emilion, to safeguard some precious vivid juices — the last stage of a long process.”
