The Details
This is a bright and complex red from Rachel Signer of Persephone Wines who works in the Adelaide Hills of South Australia.
Tasting Notes: As evidenced by the presence of a cork in lieu of a crown-cap, this bottling will reveal more and more depth with some age. A kind of powdery, earthen mist in the bouquet gives over to a palate that is plump and joyously balanced between spice and berry. Medium length with a gentle acid structure.
Vinification: 100% Pinot Noir from the same single-vineyard as her other Pinot bottling. Hand-harvested and manually-basket-pressed into amphora where the juice ferments and ages. Unfined, unfiltered with no additional SO2. 13.5% ABV
