Organic cultivation of vines with strong application of biodynamic principles. 100% Gamay from 50 year-old vines in Annonay -- infusion style a la Daniel Sage! 50% of the Gamay grapes are directly pressed while the remaining 50% are chucked into the rosé juice whole-bunch to macerate/infuse, etc. Flottaison, underwater carbonic, whatever you want to call it. 25-days prior to pressing to stainless steel tank. The wine rests for 9 months and is bottled unfined, unifltered, no additional SO2. 13.5%ABV
