The Details

100% Sauvignon Blanc from organically cultivated vines in Touraine. Grapes are hand-harvested, directly pressed and spontaneously fermented and aged in 225L neutral barrel and enamel lined vats. Wines age sur lie for 4-8 months before being bottled unfined, unfiltered, 20ppm added SO2.
