Spry, delicious, minerally, deep-rosé mountain bubbles courtesy of Martin Gojer.
90% Lagrein, 10% Vernatsch (Schiava) biodynamically cultivated in Quartz/slate soils with volcanic bedrock. The Lagrein is directly pressed while the Vernatsch is macerated for 36 hours prior to pressing. The juices are thereafter blended and undergo spontaneous fermentation together prior to being bottled a la ancestral method (pét-nat). Unfined, unfiltered, no additional SO2. 12%ABV
