The Details
90% Schiava, 10% Lagrein from biodynmically cultivated in the Bolzano basin of Alto-Adige. Grapes are hand-harvested from 42 year-old vines, macerated for a short period of time prior to pressing. A portion of the wine co-macerates with the skins of their 'Caroline' bottling (an orange cuvée). Matured in neutral oak and stainless steel. Bottled unfined, unfiltered, minimal (10ppm) added SO2.
