The Details

From the steepest vineyard at 700m altitude in Laste Sopra, Alto-Adige, this is a field blend of 10+ varieties aged 34 years on average. Grapes are hand-harvested from biodynamically cultivated vines. 5 days of maceration - 50/50 whole-cluster and destemmed. Pressed and aged in concrete on the fine lees for 6-9 months before bottling unfined, unfiltered, minimal (10ppm) added SO2.
