The Details

An Etnean Rosato of Nerello Mascalese/Nerello Cappuccio from a small plot on the northwestern face of the mountain, near Lingualossa, in a site named Mollarella. Grapes are hand-harvested and the vinification (separately) is as follows: Cappuccio macerates for a few hours prior to pressing and spontaneous fermentation/aging in stainless steel for 8-10 months whereas the Mascalese macerates for 60 hours prior to pressing and spontaneous fermentation/aging in fiberglass for 8-10 months. Blended and rested for a few months in stainless steel prior to bottling unfined, unfiltered, no additional SO2. 13% ABV
