The Details
From the northwest slopes of Etna, this is a short-maceration white from Salvatore Giardina's négoce project Racina Republic. Grillo/Catarratto/Inzolia from clay/limestone soils (bit of an exception on the volcano whose soils are otherwise....volcanic). Grapes are hand-harvested and macerate for up to 12 hours prior to pressing. Spontaneous fermentation and aging in stainless steel for 9 months prior to transfer to fiberglass for 2 further months rest. Bottled unfined, unfiltered, no additional SO2. 11.5%ABV
