The Details

From Hawkeye Ranch, this is old-vine Carignane and young-vine Pinot Noir. The grapes are organically cultivated. Hand-harvested and vinified separately: Carignane is destemmed and spontaneously ferments in neutral barrel before 13 month élevage also in neutral barrel. Pinot is semi-carbonically macerated in flextank egg before pressing to neutral barrel and a 13 month élevage. Blended thereafter, the finished wine rests for a month before bottling unfined, unfiltered, no additional SO2. 13% ABV
