The Details

100% Chenin Blanc from biodynamically cultivated vines ranging in age from 15-90 years-old in Rablay. Grapes are hand-harvested (red sand and quartzite/gravelley soils), whole-bunch directly pressed, and spontaneously fermented in stainless steel (primarily - with some juice aging in 500L tonneaux) and aged for 10 months before being bottled unfined, unfiltered, minimal (<20ppm) added SO2.
