Muscly, chiseled Jurassic Chardo! Tech: Parcellaire Chardonnay from Saint-Savin, a 1.6hectare vineyard planted three times – 1973, 1986, and 2010 – so the vines reflect a variety of ages. Slow press over 5 hours – fermented and aged 2 years (topped up) in neutral barrel. 0/0
