The Details
100% Poulsard from 40 year-old biodynamically cultivated vines near the Saint-Savin parcel in the Jura. Grapes are destemmed and macerate for 12 days prior to pressing. Spontaneous fermentation and élevage in stainless steel for 8 months prior to bottling unfined, unfiltered, no additional SO2. 12.5% ABV
