The Details

100% Chardonnay biodynamically cultivated in a .2HA Puligny Montrachet. Grapes are hand-harvested from 20 year-old vines, directly pressed after a foot crushing. Naturally clarified over 1 day (settled) and then barreled down. Spontaneous fermentation and aging for 8 months thereafter in a single 400L neutral barrel. Bottled unfined, unfiltered, no additional SO2.
