100% Chardonnay from 22 year-old vines planted by the quiet legend/precursor of natural Burgundian wines (the parcel has been, since planting, cultivated according to the tenets of no-till organic permaculture) Jean-Jacques Morel in Saint-Aubin. Heavy clay/limestone soils. Grapes are hand-harvested, foot-crushed, directly pressed into neutral barrel where the wine ages for 8-10 months before bottling unfined, unfiltered, no additional SO2. 12.5% ABV
