The Details

90% Grecanico / 10% Carricante from the northern and northeastern faces of Mt. Etna - vines are 60-70 years-old and organically cultivated. Grapes are hand-harvested from the volcanic soils and Grecanico is macerated for 4 days while Carricante is directly pressed. Spontaneous fermentation and aging in a combination of demijohn and chestnut barrel. Blended and bottled after a year unfined, unfiltered, minimal (20ppm) added SO2.
