The Details

Mt. Etna field blend! Grecanico & Grecanico Dorato grapes macerate for 1 week, meanwhile the rest of the wine's blend (Catarratto, Minnella Bianco, Carricante & Inzolia) are whole-bunch, directly pressed into stainless steel before being blended with the macerated Grecanicos juice. The wine finishes spontaneous fermentation in stainless steel where it completes malolactic fermentation as well and matures on the fine lees for 5 months. Bottled unfined, unfiltered, no additional SO2. 11.5%ABV
