Northern Etna. 100% Nerello Mascalese. Grapes hand harvested and destemmed. Fermented open-top in the traditional Georgian Qvevri, followed by a period of 5 month maceration on the skins with the tops closed. Afterward, the wine was moved to smaller vessels where it rested until bottling in 2015. Unfined, unfiltered with no additional SO2.
