The Details
A Pet Nat of Pinot Noir, Verdelho, Sauvignon Blanc, Semillon and Roussanne. Grapes were hand-harvested, followed by a direct pressing for the Pinot and a co-fermentation of the Verdelho, Sauvignon Blanc, Semillon and Roussanne with 14 days of skin contact. All grapes fermented with wild yeasts. Unfined, unfiltered but disgorged. No SO2.
